roasted broccoli/chive sauce

Roasted Broccoli with Chive Sauce


  • 1 bunch broccoli
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 tbsp fresh chives chopped
  • 1/4 cup parmesan cheese
  • salt and pepper to taste


  1. Trim ends and leaves off broccoli.  Cut into small pieces, about 1 inch or so.

  2. Place broccoli in medium bowl and toss with olive oil and lemon juice.

  3. Spread on a baking sheet and roast in a 350 degree oven for about 20 minutes or until tender.

  4. While broccoli is cooking, in small saucepan melt butter.

  5. When butter is melted, add in flour and whisk to combine.

  6. Add in milk and stir over medium heat until sauce thickens.

  7. When thickened, add in chives, parmesan cheese and salt and pepper to taste.

  8. Serve broccoli smothered with chive sauce.  This was really good served over a baked potato with butter.
