Its been one of those weeks of craziness – getting ready for the new school year, two different sports schedules, weekly parish meetings starting, piglets born and caring for puppies. It was nice to sit down to this recipe of roasted broccoli with chive sauce which we served over baked potatoes. This is definitely one to add to the comfort food collection.
Hope you have been enjoying your CSA box as the season winds down. Its always sad to me when the first frost is imminent and the tender veggies are done. All the reason to enjoy them while we can!!
Roasted Broccoli with Chive Sauce
- 1 bunch broccoli
- 4 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 2 tbsp fresh chives chopped
- 1/4 cup parmesan cheese
- salt and pepper to taste
Trim ends and leaves off broccoli. Cut into small pieces, about 1 inch or so.
Place broccoli in medium bowl and toss with olive oil and lemon juice.
Spread on a baking sheet and roast in a 350 degree oven for about 20 minutes or until tender.
While broccoli is cooking, in small saucepan melt butter.
When butter is melted, add in flour and whisk to combine.
Add in milk and stir over medium heat until sauce thickens.
When thickened, add in chives, parmesan cheese and salt and pepper to taste.
Serve broccoli smothered with chive sauce. This was really good served over a baked potato with butter.
